The cooking style in the Caribbean islands is unique. Each island has its own slight variations according to the climate or what is available. This style began as a result of lack of other resources for cooking.
People in the Caribbean islands use many herbs and spices in their cooking. These include spices like all spice, curry, thyme and different kinds of pepper. The peppers range from not so hot to very hot. One of the hottest spices used is habanero. They also use many different kinds of fruits like pineapple and mango plus many others. As there are not enough grazing spots for cattle they do not use beef but instead use fish, chicken and goat meat. Turtle meat is also used at times in certain dishes. People of the Caribbean also use yams which may be similar to our sweet potato but not as sweet. If a dish includes chicken it is often browned before adding the other ingredients. Lime is used very much like we use lemons in America for marinating. They are good at taking any meat and cooking it so that it is very soft.
Some dishes that are made are different soups and stews which is where the turtle meat is used. Fungi is also made with bits of okra stirred into corn meal porridge. This is often served with a salt fish and has differing names depending on the location. Another item that may be included with this meal is called duccana. This is dumplings made with shredded sweet potato and coconut which is wrapped in banana leaves.
